Ingredients

  • 1 tbsp Olive Oil
  • 1 each Onion
  • 1 each Bell Pepper
  • 3 each Garlic Cloves
  • 1 1/2 lb Ground Beef
  • 3 tbsp Chili Powder
  • 2 tsp Ground Cumin
  • 1 tsp Paprika
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 3 cup Diced Tomatoes
  • 2 cup Tomato Sauce
  • 2 cup Kidney Beans
  • 2 cup Black Beans
  • 1 cup Beef Broth
  • 1 cup Cheddar Cheese
  • 1/2 cup Sour Cream

Directions

Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper and cook for 5 minutes until softened. Add the garlic and cook for 1 minute. Add the ground beef and cook until browned, breaking it into small pieces. Drain excess fat if needed. Stir in the chili powder, cumin, paprika, oregano, salt, and black pepper. Add the diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth. Bring to a gentle boil, then reduce the heat to low and simmer uncovered for 30 minutes, stirring occasionally. Stir in the cheddar cheese until slightly melted, then serve with sour cream.
