Chop Suey: Essman-Style

Pretty much exactly the same as I grew up eating in the 90s Essman household. Not sure about the servings.

Ingredients

  • 2 lb Macaroni Elbows
  • 1 lb Ground Beef
  • 1/2 lb Mushroom
    chopped
  • 1/2 each Onion
    or whole onion, if desired.
  • 1 tbsp Cinnamon
    to taste
  • 2 tsp Salt
    to taste
  • 1/8 cup Honey
    or equivalent, to taste
  • 2 tsp Garlic Powder
    to taste

Directions

Cook elbows according to instructions on the box. Brown ground beef (chorizo or ground sausage is a delicious substitute, we call it hot suey when we do that). Add onion and mushrooms and saute until onion is translucent. Mix elbows, meat mixture, and remaining ingredients in pot or large serving bowl. Enjoy!
